Excellent post  and even a while after it is still actual. My own experience of developing tablet apps was tough, so I tried different tools: some of them a excellent in general, for example ibuildapp, others took me a looot of time and I still haven't finish my app on them, so look around on the web and see which one appeals you the most. As a side note: I developed few designs and posted them on ibuildapp.com, so you can check them out and use for free as well.
