Performance is fine on 15, problem is AAA gaming isn't as suitable for phones as live service gaming, when you can play for 7 minutes while you commute and just turn off the screen, while AAA gaming requires you to actually invest time.
Live service games are cashing in hundreds of millions on iPhones while AAA is more suitable for an iPad.

Apple knows that so they've used Star Rail and some other chinese live service game coming soon as big selling points in their presentations. Both are actually better than any AAA game on the platform right now, except maybe Snowrunner (but it's 'macs only' so far)

A brand-new chip powers the latest Apple iPhone 16 Pro series, the A18 Pro. In a recent Geekbench CPU test, this SoC scored higher than the A17 Pro, and now, it has outscored the predecessor and even the Apple M1 in the latest GPU benchmark.
